Dulce de leche began as a 19th-century accident, but in Argentina, it became a religion. For Silvana, it was the flavor of home; for Chef Pete, it became a mission to do things better. After a career cooking for NASCAR crews came to an unexpected halt, we decided to strip away the mass-produced fillers and return to the slow-simmered basics.
